Cast Iron Skillet Pork Chops

I grew up with cast iron. Some days breakfast, lunch, and dinner were cooked in those pans. Kenny and I were out shopping last week and decided to get a set of skillets to cook up some new recipes. I am very glad we splurged! While I created this meal and made this recipe up as I went, we threw an easy microwaveable package of potatoes and green beans in. I know, I know sounds gross, but it was really good. These microwavable veggie packs are really convenient and mostly good for you. Watch out for the sodium!
This meal was a celebration for us as we ring in the New Year at a new market. Kenny and I both are very excited to be back in the market world. It is nice to get out of the house. We like to stay busy.

- 1 Package FGF Bone-In Chops

tblsp olive oil - 1tsp salt
- 1 tsp pepper
- 1 tbsp minced garlic

Make sure your FunGuy Farms pork chops are fully thawed. Heat up your cast iron skillet to medium-low heat and add olive oil. Preheat your oven to 350F.
Take your pork chops and rub them with salt and pepper on both sides. Place in skillet and brown on both sides for 5-8 minutes on each side. After browning, sprinkle garlic on top of the pork chops, and place in oven.
Bake in the oven for 15-20 minutes or until desired doneness. Check with a meat thermometer at 15 minutes. Pork should reach an internal temperature of 160-165F.
