Heavenly or Devilishly Deviled Eggs

One holiday staple of ours is deviled eggs.

We believe our eggs have higher omega-3’s that make their yolks darker, richer, creamier and thus way more flavorful than traditional deviled eggs. My mom made these when I was a kid around Thanksgiving, Christmas, and Easter. My brother, sisters, and I ate so many of them, we were sick. Now, when holidays roll around I’ll be the first to offer to make these so I don’t have to taste store-bought eggs (bleghhh-I know, we are spoiled) or go without. Sorry, Mom! I’ve never tasted the difference in a farm fresh egg and never truly understood the difference in pastured products until I had an egg from our farm. The yolk, texture and egg white consistency is unlike any other! Trust me, I’ve been to the store and bought the closest to pasture-raised, humanely raised, and non-GMO as I could find and there is no comparison.

Our farm fresh, non-GMO, pasture-raised eggs are by far the best.

I know, there is bias here. Some customer testimonials we have heard, “You’re eggs are so much better than any eggs I buy from the store!” “The yolks are deeply yellow and nearly orange in color, it’s amazing.” “I won’t buy eggs from the store ever again!” Another customer of ours has some specific dietary restrictions and all the store bought eggs she tried made her sick so she decided her last try would be our farm fresh, beyond organic, non-GMO, pasture raised eggs. She can eat those without feeling ill and she was very excited, so were we! Hearing stuff like this makes us very happy and drives us to continue to work hard to supply our community with healthy and humanely raised products to heal them! (Thoughts like these are nice to reminisce about when we spend 6 hours of our weekend cleaning out the goat/chicken pen! (Sweaty and stinky work even  when it is 40 degrees!)

What makes the difference?

Good question. We can’t decide! Because our hens get to forage and roam pretty much wherever they want we aren’t sure if it’s all the bugs or the non-GMO feed or just from being a happy chicken. I’m going to assume that the combination of all of our methods makes the best and happiest hen that lays a very rich, nutrient-laden egg.

Happy hens lay healthier eggs.

Peel eggs the easy way

Our pasture-raised eggs are easier to peel mainly because they haven’t been washed or soaked in bleach/chlorine. We simply brush or sand any excrement off and leave the hens natural coating on the egg as much as possible. This is why farm fresh eggs (6-8 weeks) last longer than store bought (4 weeks) and technically they don’t have to be refrigerated. However, the health department requires eggs be refrigerated. But, whether you buy store bought eggs or our farm fresh eggs our secret ingredient will save you time getting the egg shells off. It has been a game changer when it comes to peeling eggs.

You ready for it?

Baking soda. That’s it. I add 1 tsp to the water then bring it to a boil and it makes for a very durable shell that peels off without breaking into tiny sharp shards. Easy peasy! Another great thing about this recipe is you can prep and cook the day before an event and they will be easy to assemble in a few minutes before guests arrive so they stay chilled and perfect!

The second trick to making perfect deviled eggs: RELISH

We always add relish to our deviled eggs. Without it, something just tastes like it is missing! I love relish so… the more relish the better. I always use 2 Tbsp or more! (Usually more.) If you’re not sure or have never added relish, you’re missing out! To start, add 1tbsp and then do a taste test, everyone’s palate is different.

Substitute 2Tbsp of Sweet pickle relish for:

2 Tbsp Mad Sweet Heat Relish (If you’re not sure about the heat level you can handle add 1 Tbsp then do the taste test. We like it hot!)

Heavenly or Devilishly Deviled Eggs

Rich and creamy pasture-raised eggs that are a perfect holiday appetizer for a crowd. Choose between traditional or relish in the mad sweet heat of jalapenos!

  • 12 FunGuy Farms Non-GMO Pasture-Raised Farm Fresh
  • 2 tbsp Sweet Pickle Relish(Heavenly) OR Mad Sweet Heat Relish(Devilish)
  • 1 tsp Baking Soda
  • 1/2 cup Miracle Whip
  • 1 tbsp Mustard
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1/4 tsp Paprika
  1. Fill a pot with cold water and add 1 tsp of baking soda.

  2. Add eggs to cold water and bring water and eggs to a rolling boil. Cover with lid and cook for 10 minutes then remove from heat. Let eggs cool.

  3. When eggs are cool enough to handle crack and peel shell. 

  4. Cut eggs in half long ways and separate egg white from the yolk, carefully. Place yolks in a separate bowl and add miracle whip, mustard, salt, and pepper. Blend mixture with a fork until creamy and smooth. Then mix in the relish of your choosing.

  5. Place mixture in a plastic bag and then snip the corner to create a piping bag. Evenly distribute mixture into eggs white. 

    Sprinkle with paprika and serve.
